This recipe from the Honey Connoisseur cookbook was a big hit at my last dinner party; Easy and delicious!
HONEY STRUCK CHOCOLATE TRUFFLES
2 c almonds, cashews or walnuts
¾ c cocao powder
5 dried pitted dates
1 T coconut butter
¼ c buckwheat honey
1 T butter
2 T water
shredded unsweetened coconut
Grind nuts. Add cocao powder, dates, honey, coconut butter, salt and blend.
Add water to make moist but not wet. Hand-roll into cherry-size balls and roll in coconut. Store in the refrigerator to 1 hour before serving.
